These crispy, delicious onion rings make a great side or appetiser and by baking them rather than deep frying them, they’re also much healthier!

Ingredients
  • 2 large white onions
  • 3/4 cup unsweetened milk (I used soy)
  • 1 cup corn flour
  • 1 cup bread crumbs
  • 1 tbsp nutritional yeast
  • 1 tsp ground cumin
  • 1 tsp ground paprika
Servings: people as a side or appetiser
Instructions
  1. Pre-heat the oven to 220˚C and line an oven tray with baking paper.
  2. Slice the onions into rings that are 1-1.5 cm in width.
  3. Prepare three bowls, put the soy milk in one bowl, the corn flour in another bowl, and in the third bowl mix the bread crumbs, nutritional yeast, cumin and paprika together.
  4. Dip each onion ring into the milk, then coat all over with corn flour, then dip it back into the milk and then coat with breadcrumbs. You want quite a thick layer of bread crumbs on each onion ring. Place the onion rings in a single layer on the oven tray.
  5. Bake for 15 minutes, turning halfway through.
