These brownies are so moist, fudgy and delicious, and they’re refined sugar free. You can easily substitute the wheat flour for gluten free flour if you want to make these gluten free, play around with different amounts and types of liquid sweetener or add nuts or dark chocolate chips. They’re super quick and easy to whip up so they make a great last minute dessert.
Ingredients
- 2 cups pitted dates
- hot water
- 1/4 cup maple syrup
- 1 cup all purpose flour
- 1 cup cocoa powder
- 1 tsp vanilla essence
Servings: brownies
Instructions
- Preheat the oven to 180˚C.
- Add the pitted dates to a bowl and cover them with hot water, leave them to soak for at least 10 minutes to soften them.
- Drain the water from the dates and add them to a food processor. Blend until the dates form a smooth paste.
- Add the remaining ingredients to the food processor and blend until a thick dough forms. The dough will be pretty sticky because of the dates (if it's too sticky to work with you can add a little more flour but adding too much will make it less fudgy and more cake-like).
- Grease a 25 x 25 cm baking dish. Use a spatula to press the brownie dough into an even layer in the dish. Bake for 15 minutes.
- Remove from the oven and leave to cool for 10 minutes or so before cutting and removing from the dish.
