Vegan chocolate chunk cookies

Ingredients
  • 1 cup brown sugar
  • 1/2 cup margarine or vegan butter
  • 1 tsp vanilla essence
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 cup dark chocolate broken into small chunks
  • 1/4 cup non-dairy milk
Servings: cookies
Instructions
  1. Preheat oven to 180˚C
  2. Cream the margarine/butter, vanilla essence and sugar together in a large bowl.
  3. Slowly add the milk and beat into the sugar and margarine mix.
  4. Sift flour and baking powder into the bowl and mix into the wet mixture.
  5. Stir in the chocolate chunks.
  6. Line a baking tray and put spoonfuls of the cookie mixture onto the tray, pressing slightly to flatten. The cookies will spread a little so make sure you don't place them to close together.
  7. Bake the cookies for 15 minute. They might be a little soft when you first take them out of the oven but the outside will crisp up once they have been left to cool on a wire rack.
