This is our favourite recipe for vegan chocolate chunk/chip cookies, they’re crispy on the outside with a soft, chewy centre!
Ingredients
- 1 cup brown sugar
- 1/2 cup margarine or vegan butter
- 1 tsp vanilla essence
- 2 cups flour
- 1 tsp baking powder
- 1/2 cup dark chocolate broken into small chunks
- 1/4 cup non-dairy milk

Instructions
- Preheat oven to 180˚C
- Cream the margarine/butter, vanilla essence and sugar together in a large bowl.
- Slowly add the milk and beat into the sugar and margarine mix.
- Sift flour and baking powder into the bowl and mix into the wet mixture.
- Stir in the chocolate chunks.
- Line a baking tray and put spoonfuls of the cookie mixture onto the tray, pressing slightly to flatten. The cookies will spread a little so make sure you don't place them to close together.
- Bake the cookies for 15 minute. They might be a little soft when you first take them out of the oven but the outside will crisp up once they have been left to cool on a wire rack.
