Put all the ingredients except the carrots in a bowl and mix. Add the carrots, cover and refrigerate for at least an hour.
For the Sriracha mayonnaise
Whisk together all the ingredients in a bowl.
For the hot dogs
Cook the frankfurters in a frying pan or on the BBQ. Add the cucumber slices, diced jalapeño pepper and carrots to the buns, add the sausages and then top with the sriracha mayo and coriander leaves.
