Vegan Banh Mi Hotdogs
For the pickled carrots
  • 1/2cup water
  • 1/4cup rice wine vinegar
  • 2tbsp sugar
  • 1cup shredded carrot
For the sriracha mayo
  • 1/3cup vegan mayonnaise
  • 1tbsp sriracha
  • 1tsp lemon juice
For the hot dogs
  • 4 vegan bratwurst sausages
  • 1/2cup sliced cucumber
  • baguettes or bread rolls
  • 1 diced jalapeño pepper
For the pickled carrots
  1. Put all the ingredients except the carrots in a bowl and mix. Add the carrots, cover and refrigerate for at least an hour.
For the Sriracha mayonnaise
  1. Whisk together all the ingredients in a bowl.
For the hot dogs
  1. Cook the frankfurters in a frying pan or on the BBQ. Add the cucumber slices, diced jalapeño pepper and carrots to the buns, add the sausages and then top with the sriracha mayo and coriander leaves.
