Ingredients
  • 3cups rolled oats
  • 2cups mixed nuts(I used almonds, walnuts, hazelnuts and cashews)
  • 1tsp ground cinnamon
  • 1/2cup liquid sweetner(I used maple syrup)
  • 1/2cup melted coconut oil
  • 1/2cup shredded coconut
  • 1/2cup raisins
  • 1/2cup dried cranberries
Instructions
  1. Preheat the oven to 180˚C.
  2. Pulse the nuts in a food processor if you want them in smaller pieces, this is optional but recommended depending on the type of nuts you use. Add the nuts into a large bowl with the nuts and mix them together with the cinnamon.
  3. Add the maple syrup and coconut oil to the bowl and mix through thoroughly.
  4. Line a baking tray with baking paper, spread the muesli mix over the tray in a thin layer.
  5. Bake for 10 minutes, remove from the oven, stir in the coconut, bake for a further 10 minutes or until the muesli has turned golden brown. It can brown quite quickly so keep an eye on it and stir it if necessary.
  6. Allow the muesli to cool and then stir in the raisins and dried cranberries. Store in an air tight container.
