This muesli is perfect served with almond milk or sprinkled on top of a smoothie bowl. It’s so much healthier and tastier than store bought muesli and you can customise the fruit and nut combinations.
Ingredients
- 3 cups rolled oats
- 2 cups mixed nuts (I used almonds, walnuts, hazelnuts and cashews)
- 1 tsp ground cinnamon
- 1/2 cup liquid sweetner (I used maple syrup)
- 1/2 cup melted coconut oil
- 1/2 cup shredded coconut
- 1/2 cup raisins
- 1/2 cup dried cranberries

Instructions
- Preheat the oven to 180˚C.
- Pulse the nuts in a food processor if you want them in smaller pieces, this is optional but recommended depending on the type of nuts you use. Add the nuts into a large bowl with the nuts and mix them together with the cinnamon.
- Add the maple syrup and coconut oil to the bowl and mix through thoroughly.
- Line a baking tray with baking paper, spread the muesli mix over the tray in a thin layer.
- Bake for 10 minutes, remove from the oven, stir in the coconut, bake for a further 10 minutes or until the muesli has turned golden brown. It can brown quite quickly so keep an eye on it and stir it if necessary.
- Allow the muesli to cool and then stir in the raisins and dried cranberries. Store in an air tight container.
